With a 48-quart (12-gallon) capacity, the Groen TDB-48C tilt kettle can be used for large batch cooking on a countertop. Using steam, the kettle heats product evenly and efficiently because it is made with a hollow space, called a jacket, between the interior and exterior. This jacket, which covers the lower two thirds of the kettle, is filled with water that turns into steam. Because the jacket only covers the lower part of the kettle, it saves water but heats less evenly than a fully jacketed model.
A hand tilt is integrated into this steam-jacketed kettle, so operators can tilt it to pour product into a container or storage pan. A butterfly-shaped pouring lip is welded into the rim to direct contents out of the kettle without making a mess. Because the rim is reinforced, it will not dent, preventing changes in steam pressure.
